I am using output through Composite Video (720 x 576 pixels / PAL). So everything is blurry / fuzzy, and text is unreadable.

I can change the Text Size in the Android settings (small, normal, large, huge). But if with Huge size, text is still somteimes unreadable. Also it only changes text sizes on some parts of the app, for example on a web browsers URL entry bar and Tab title, and not in other places.

Is there anyway to increase the Text Size beyond Huge size, and also for other parts of the interface/apps?

At this resolution it can be hard to read text as it is a low resolution and usually apps are designed for 720p resolution. This is why some apps can be harder to read text on than others, it can depend on how the app is developed. Some apps may have text settings such as the Chrome web browser, go to Settings -> Accessibility and there should be some settings to increase the text size or zoom which should help.
