When playing emulators on my MOQIi7S, I get these weird onscreen overlay of buttons on the screen. These are not specific to the emulator as I was able to hide those. They appear to be somehow built into the system software? Does anyone know how to hide and or get rid of them?

It's MOQI's proprietary screen mapping software. Pressing the buttons on the device will correspond to a touch screen input, allowing you to play touch screen games using physical controls. They can be configured and moved around to adjust to different apps too.
It's really quite a useful feature for faster paced games like shooters.

I'm not quite sure there's a way to get rid of them off the top of my head though. Sorry.
